On the left, the raw pixel grid: the way the wall physically lays the image out. On the right, the same thing as your eye assembles it from 60 m. Drag the divider left and right: wherever the right half stays smooth and continuous, your eye no longer breaks the image into pixels — the pitch is fine enough for that distance. The grid has disappeared on the right: from this distance the pixels merge and your eye sees the continuous image — that is the goal. Drag the viewing distance down and the grid comes back.

The image shows a 0.9 m section of the wall, magnified — that is the only way the LED pixels are visible at all. On a 7-metre wall the grid would be invisible at this canvas size.

Beyond the turquoise zone the eye no longer resolves the pixels — above that, a finer (more expensive) pitch buys you nothing.
Recommendation — „Large text / simple graphics", outdoor, 60 m: the most economical choice is P20. The P10 you picked is finer than needed — P20 shows the same content just as well, for less.
Large text stays readable from a distance on a coarser, more economical pixel pitch — photo-grade fineness is not needed.
